Life as Mom is hosting a "Dinners for New Mom's" link up today. I wanted to share this recipe that is easy to make. It is actually my wonderful Mother-In-Laws yummy recipe.
Polynesian Chicken
1 pkg boneless skinless chicken breast, cut into small pieces
1 jar regular bbq sauce (I use Kraft)
1 jar HOT bbq sauce
1 large can of pineapple chunks
1 green pepper, cut into large chunks
1 sweet onion, cut into large chunks
1. In a large bowl, mix half of regular bbq sauce with half of hot bbq sauce (use different combos depending on how spicy new mom likes food).
2. Open can of pineapple and add half of chunks and half of juice.
3. Add green pepper and onions to mixture.
4. Add chicken (uncooked) into mixture
5. Put into 9x11 baking dish (sprayed with Pam)
6. Bake at 350 for 30-35 minutes or until chicken is cooked.
This can be served with rice or noodles
